For Mark Davidson, switching to organic was a logical progression from the eco-friendly viticultural practices he had always pursued. And much of the inspiration for this eco awareness came 20 years ago when he bought Tamburlaine, "a degraded farm" with shallow, over-cultivated clay soils. Both winemaker and vineyard manager, he nurtures and then processes the grapes from his Hunter Valley and Orange vineyards.
